Regular grocery store granulated sugar clumps, does not melt correctly, and can jam the machine’s heating element. Flossing sugar is available at restaurant supply stores, party supply stores, and online. Plan for roughly 1 cup (250g) of flossing sugar per 20–30 cones.
Turn the machine on 2–3 minutes before adding sugar to let the spinning bowl and heating element reach operating temperature. Adding sugar to a cold bowl often results in poor floss formation for the first batch. Once up to temperature, add a small spoonful to the centre head and wait for strands to form before collecting.
The bubble dome shield dramatically reduces the amount of cotton candy strands that escape the bowl during spinning. Keep it in place during operation and only lift it briefly to collect candy onto a cone or stick. This makes the process much cleaner, especially indoors or on windy days outdoors.
